Classic Chuck Pot Roast

The Classic Chuck Pot Roast

Ingredients:

  • 4 - 5 lbs BDA Chuck Roast

  • 3 Tbs. butter

  • 1 Tbs. oil

  • 1 onion

  • 4 cloves of garlic

  • 7 BDA carrots

  • 4 BDA sweet potatoes

  • 2 tsp. of dried rosemary

  • 1 tsp. Dried thyme

  • 2 bay leaves

  • 1 cup of red wine

  • 2 cups of stock

  • Salt & Pepper to taste


Instructions:

  1. Preheat oven to 350. Season the roast on all sides with generous amounts of salt and pepper and the dried herbs, rubbing in.

  2. Put dutch oven on medium high heat, with the butter and oil. Add the meat, browning the sides of the roast (about 3 minutes on each side).

  3. Remove the roast from the pan and set aside.

  4. Add the onions, garlic, carrots, and sweet potatoes, cooking until browned. Deglaze with the wine and stock. Cook for 5 minutes before adding the roast back to the pot.

  5. Cover and transfer to the oven. Cook for 4-5 hours until the meat is fork tender.

  6. Serve and enjoy!
