Wrapped Up in Filet Mignon

Bacon Wrapped Mignon with Wine Sauce

Ingredients:

  • 4 BDA Filet Mignon

  • 4 thick slices of bacon 

  • 1 medium onion diced

  • 3 cloves minced garlic

  • 3 tsps oil of choice

  • 2 Tbs butter

  • 2 tsps dried thyme

  • Salt and Pepper to taste

  • 1 ½ cups of broth (beef, chicken, or vegetable)

  • ½ cup red wine

Filet Instructions:

  1. Allow steaks to come to room temperature before beginning.

  2. Pat dry. Wrap each BDA Filet around the edges with a slice of bacon, securing with a toothpick. Season both sides with salt and pepper.  

  3. Bring the skillet to a high temperature. Add oil.

  4. Place Filets in heated and oiled skillet, searing for 3 minutes on each side until the meat is golden brown. Don’t forget to also sear the sides to crisp up that bacon! 

  5. Check your Filets with a meat thermometer, if the inside reaches 125 degrees the meat should be around medium rare. Cook longer if desired.

  6. After each BDA Filet Mignon has been cooked transfer to a plate and remove the toothpicks. 

Sauce Instructions:

  1. Reduce pan to medium heat and pour in the red wine to deglaze. Add butter and onions and garlic, cooking until tender. Stir in the broth, salt, pepper and thyme. Bring to a simmer for a few minutes.

  2. Serve and enjoy!
