Garden Herb Roast Beef

The holiday season is roast beef season! Here is one delicious way to prepare your roast beef!

Garden Herb Roast Beef

Ingredients:

  • 2.5 - 3.5 lb BDA Eye of Round Roast (or other roast)

  • 3 Tbs. fresh rosemary, chopped

  • 3 Tbs. fresh oregano, chopped

  • 3 Tbs. dried basil

  • 15 cloves of garlic chopped

  • Salt and pepper to taste

  • 4 Tbs. olive oil

  • 4 Tbs. butter

  • ¾ cup stock (beef, chicken, or vegetable will work!)

  • 2 BDA onions, sliced


Instructions:

  1. Preheat oven to 350.

  2. Season the roast with salt and pepper.

  3. In a bowl, mix together half of the olive oil with all the herbs and garlic.

  4. Heat a cast iron skillet over a medium heat, oiling the pan with half of the olive oil. Once the skillet starts smoking, sear all sides of the roast.

  5. Remove iron skillet from the heat and generously brush the roast with the herb mix.

  6. Transfer the roast, in the skillet, to the already preheated oven and cook until the meat is 135 degrees, about 1 - 1 ½ hours.

  7. While the roast is cooking, sauté the onions with butter, seasoning with salt and pepper.

  8. Transfer the roast into a serving dish. Deglaze the skillet with the stock and let simmer for about 5 minutes.

  9. Pour onions and sauce over the roast.

  10. Garnish with more dried herbs.

  11. Serve and Enjoy!
